
The other day, I was trying to explain to the man I live with about Red Velvet Cake ... how when you add vinegar to the mix in a chocolate cake that the chemical reaction is what makes the red color come up. Ok ... it's more complicated than that but still ... its a reaction that's kind of cool to know about. Plus I was trying to tell him about how there are formulas to baking that involve a lot of careful measurements and well ... science! He was pooh-poohing me which was kind of odd seeing he's a chemical engineer!
So I was vindicated today when I came across this blog on Analyzing a Baking Recipe! It has formulas and charts and all kinds of things an unruly person would need in the kitchen ... and vindication for me. There really IS a lot of science in cooking!!
These vintage tips from an old cookbook are fun too and I love how the little rhymes get the point across. Actually, that second one would be fun for a bridal shower ... the image would make a cute tag or card. Fun!!
Oh ... and one other point I tried to get across in my conversation ... cooking and baking aren't the same thing. In cooking you can get away with tossing in this and that and peeking under the lid to see how its going ... in baking measuring and timing is really important. And NOT opening the oven!! I know this from watching the cupcake challenges. It's true.
